Homemade Meatball Spaghetti...

Cara nak buat meatball...

Ingredients:
  • 1 lb. lean ground beef
  • 1 egg
  • 2 Tbsp. water
  • 1/2 cup bread crumbs (aku guna grated baguette)
  • 1/4 cup minced onion
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • Aku tambah 1 tsp dried Oregano

Preparation:

Preheat oven to 350 degrees. In large bowl combine egg, water, bread crumbs, onion, salt and pepper and combine. Add ground beef, broken into chunks, and mush with your hands to combine. Form into meatballs about 1" in diameter and place on a broiler pan. Bake at 350 degrees for 25-30 minutes until meatballs are no longer pink in center. Cool and freeze.

Instead of baking, I fried it in a lot of oil...

Tumis sebiji bawang merah yang telah dicincang dalam kuali yang ada sedikit minyak masak atau minyak zaiton. Masukkan 2 ulas bawang putih yang telah dicincang. Kacau sampai kekuningan. Masukkan sos spaghetti. Aku guna prego tradisional. Rasakan garamnya dan masukkan meatball tadi. Masukkan daun sweet basil segar. Boleh je kalau nak campur dengan yang kering. Kacau sampai masak. Ok, done.

Spaghetti...

Aku guna Angel Hair Spaghetti jenama Kimball. Rebus dalam air mendidih yang telah diletakkan sedikit garam dan minyak supaya tak melekat. Aku selalu lupa nak letak minyak tu. Lepas dah tos, aku terus titiskan minyak zaiton dan kacau sebati.

Unlike many other herbs, rosemary loses little of its flavor when dried, which makes it a great choice for drying and storing at home. Drying rosemary is very easy to do, and will ensure that you have plenty of this aromatic herb at hand for use in your favorite dishes. Dried sprigs of rosemary are also a lovely, aromatic decoration.

Tips:- 

Rosemary has a number of uses. It's excellent seasoning for pork, chicken, fish and seafood. Rosemary is astringent, so you can add it to steaming-hot water and use it for a facial steam treatment. The evergreen smell is invigorating, so add several rosemary sprigs to a hot bath for a quick pick-me-up. Rosemary tea is also considered to stimulate mood and circulation, and soothe the nervous system.

    If you don't have access to a food dehydrator or the appropriate drying environment, you can also preserve fresh rosemary by freezing it. Wash and shake, blot or spin the sprigs dry, then freeze in plastic bags. Once the rosemary is thoroughly frozen you can pick the leaves off the stems and package them in a mason jar, vacuum packer or any other well-sealed container.

Ayam Kicap Berempah Dan Berkerisik...


Dah lupa la kat mana dapat resepi ni...huhuhuuu... Satu lagi variasi ayam masak kicap yang sedap...

Bahan-bahan:-
Seekor Ayam - potong dan bersihkan. Lumur dengan sedikit kunyit serbuk dan garam. Goreng separa masak.
1 sudu makan Lada Hitam - ditumbuk
1 sudu makan Cili Kisar / Giling
2 sudu makan Kicap Pekat
2 sudu makan Kicap Manis atau secukupnya
Gula dan Garam atau Madu
Air Asam Jawa
Rempah 4 sekawan
2 sudu makan Kerisik

Bahan Kisar:-
5 biji Bawang Merah
1 biji Bawang Besar
2 biji Bawang Putih
1 inci Halia
1/2 inci Lengkuas
1 batang Serai

Cara:-
Gaul ayam yang telah digoreng separa masak tadi dengan 1 sudu makan kicap pekat. Perap selama 1/2 jam. Tumis 4 sekawan sampai naik bau. Masukkan bahan kisar dan cili kisar atau giling. Kacau sampai masak dan masukkan kicap pekat tadi. Masukkan ayam dan kerisik. Kacau sebati dan masukkan sedikit air. Kacau lagi. Masukkan kicap manis, garam, gula dan air asam jawa. Kacau sampai masak....

Ayam Masak Bawang Berempah...



Tapi sukatan yang diberikan adalah untuk katerer. Sesuai untuk 250 ke 300 orang. Jadi aku modified ikut selera aku sekeluarga...

Ni sukatan aku :-

Ayam - 1 ekor dipotong dan dibersihkan. Gaul dengan garam dan kunyit. Goreng separuh masak.
Bawang Besar - 3 biji dihiris halus dan digoreng garing. Ketepikan.
Bawang Besar - 1 biji dikisar halus.

Sekalikan rempah2 ini :-
Serbuk Cili - 2 sudu teh ( lebihkan kalau nak pedas )
Serbuk Jintan Manis - 1 sudu teh
Serbuk Jintan Putih - 1 sudu teh
Rempah Kari Daging - 1 sudu besar

Sos Tiram - 2 sudu besar
Sos Cili - 2 sudu besar
Sos Tomato - 2 sudu besar
Pes Bawang Putih + Halia - 1 sudu besar
Garam Masala - 1 sudu teh ( gunakan rempah 4 sekawan kalau takde)
Daun Pandan - 3-4 helai dipotong pendek2
Gula dan Garam secukup rasa
Cili Merah dan Daun Kari untuk hiasan.

Cara :-
Gunakan minyak goreng bawang tadi untuk tumis rempah 4 sekawan (kalau tak guna garam masala). Masukkan daun pandan. Tumis pes halia+bawang putih sampai wangi. Masukkan rempah2 yang telah disekalikan tadi. Tumis sebentar dan masukkan bawang yang telah dikisar halus. Masukkan sos cili, sos tiram dan sos tomato. Kacau rata dan rasakan garam dan gula. Masukkan ayam. Kacau rata. Biarkan rempah sebati dengan ayam sebelum masukkan bawang yang telah digoreng tadi. Kacau sebati dan taburkan cili merah dan daun kari sebagai hiasan.

Alton Brown's Garam Masala Recipe...

Garam Masala
 
2 tablespoons cardamom seeds
2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 tablespoon brown mustard seeds
2 tablespoons black peppercorns
20 cloves
1 dried arbol chile stemmed, seeded and crumbled
1 (2 1/2-inch) cinnamon stick, broken in 1/2
1 teaspoon freshly grated nutmeg
 

Combine all of the seeds, peppercorns, cloves, chile, and cinnamon in an 8-inch cast iron skillet over medium-high heat. Cook, moving the pan constantly, until you smell the cumin toasting, approximately 3 to 4 minutes. Remove the mixture to a plate and spread out to cool for 5 minutes.

Once cool, add the toasted mixture and nutmeg into a spice grinder. Process until a fine powder is formed, approximately 1 minute. Use immediately or store in an airtight container for up to 1 month.

Ingredients :

1/2 cup white vinegar, eyeball it
2 rounded teaspoons sugar
1 teaspoon mustard seed
1 teaspoon salt
1 clove cracked garlic
1 teaspoon dried dill or 2 tablespoons fresh dill leaves, chopped or snipped
1 bay leaf
4 kirby cucumbers, cut into 1-inch slices on an angle

Directions :

Heat small saucepan over medium high heat. Add vinegar, sugar, mustard seed, salt, and garlic to the pan and cook until it begins to simmer and sugar dissolves. Toss the dill, bay leaf, and sliced cucumbers together in a heat-proof bowl. Pour the simmering liquid over the cucumbers and stir to evenly coat. Allow to cool to room temperature or chill before serving.

Puri Untuk Si Manja...Majalah Pa&Ma April 2013...

Puri Nasi Bercampur Brokoli...
  1. Segenggam beras (lebih enak jika menggunakan beras wangi) dicuci bersih.
  2. Masak beras seakan memasak bubur nasi. Biarkan mendidih sehingga nasi kembang. Untuk mendapat tekstur bubur halus, kisar bubur nasi yang telah disejukkan. Campurkan puri brokoli bersama puri nasi.
  3. Bubur nasi ini boleh dijadikan bahan asas untuk dihidangkan bersama.

Puri Sayur-Sayuran Dan Buah-Buahan...
  1. Ambil lima kuntum kecil brokoli.
  2. Rebus atau kukus sehingga lembut.
  3. Kemudian kisar sehingga hancur dan halus.

Puri Epal...
  1. Buah epal dipotong dadu dan dibuang kulitnya.
  2. Kemudian rebus bersama sedikit air.
  3. Masak sehingga menjadi lembut.
  4. Kisar halus.

Puri Lobak Merah...
  1. Sebatang lobak merah bersaiz kecil (lobak merah kecil lebih manis berbanding bersaiz kecil) dibuang kulit.
  2. Potong lobak merah menjadi bentuk dadu dan rebus sehingga lembut.
  3. Kisar sehingga halus. Tambahkan sedikit air semasa mengisar bahan ini. 

Puri Pisang...
  1. Ambil sebiji pisang yang telah masak. Buang kulitnya.
  2. Kisar pisang dengan sedikit air sehingga halus.

    Homemade Spice Mixes...

    1) Homemade Allspice Alternative

    Ingredients:
    nutmeg
    cinnamon
    cloves

    Method :
    Mix up equal parts of these three spices.


    2) Homemade Apple Pie Spice

    Ingredients:
    • 2 Tablespoons ground cinnamon
    • 1/2 Tablespoon allspice
    • 1 teaspoon nutmeg
    • 1 teaspoon ginger
    • Optional: add 1/2 teaspoon grated dried lemon peel to add some brightness
    Instructions:
    1. In a small bowl, mix together all ingredients.
    2. Pour into an airtight container and it will last for months.


    3) Homemade Cajun Seasoning 

    2 1/2 tsp paprika 

    1 1/2 tsp chili powder

    5 dashes cayenne pepper (or less if you don't like it very hot)

    1/4 tsp pepper

    1/4 tsp oregano

    3/4 tsp thyme

    1 tsp salt 



    What you'll do:



    Mix all ingredients together in a small bowl.  Add to any soup or dish.  This seasoning is great just sprinkled on top of vegetables or to season meat.



    This recipe is easily doubled or tripled.  I like to keep a large batch of it to have on hand when I want it.  If you are making a large batch, then you will use approximately 2 Tbsp per serving.  


    4) Homemade Chili Powder

    Ingredients

    1 tsp. paprika
    2 tsp. cumin
    1 tsp. cayenne
    1 tsp. oregano
    2 tsp. garlic powder

    Mix everything together and store in a glass jar!


    5) Cinnamon Sugar ~ Made Four Ways and Healthier

    Ingredients
    Sweetest Version
    1 cup sweetener (See notes)
    2 Tbsp cinnamon
    Medium Strength
    1 cup sweetener
    4 Tbsp cinnamon
    Strongest
    1 cup sweetener
    5 1/3 Tbsp (16 tsp) cinnamon
    Cinnamon-Nutmeg Blend
    1 cup sweetener
    2 Tbsp cinnamon
    1/2 tsp nutmeg (freshly ground recommended)
    Method
    1.  Place ingredients in a bowl and mix well.
    2.  Store in an airtight container (if you are making all four blend, you could have a small container of each :-)).
    3.  Sprinkle on anything where you might like a nice sweet topping (toast, oatmeal, coffee (coffee substitute for me), etc.  

     

    6) Sweet Curry Powder

    Ingredients
    3 tsp turmeric
    2 tsp coriander
    1 1/2 tsp cumin
    1 tsp cinnamon
    1 tsp ginger
    3/4 tsp yellow mustard
    1/2 tsp white pepper (hard to find.  Omit if necessary.)
    1/2 tsp fenugreek
    1/2 tsp cardamom
    1/2 tsp cloves
    1/2 tsp nutmeg
    1/8 tsp cayenne pepper
    1/4 tsp black pepper
    Method
     1.  Place all ingredients (all are ground spices) in a bowl.
    2.  Mix thoroughly.
    3.  Store in an airtight container.



    7) Homemade "Emeril’s Essence" Seasoning Blend
    Yield: 1/3 cup
    Ingredients
    • 1 tbsp paprika
    • 1 tbsp sea salt
    • 1 tbsp garlic powder
    • 1 1/2 tsp onion powder
    • 1 1/2 tsp dried oregano
    • 1 1/2 tsp dried thyme
    • 1 tsp freshly ground black pepper
    • 1 tsp cayenne pepper (if you like it spicy, use more)
    Instructions
    1. In a small bowl, add all of the above ingredients and mix well to combine. (I use the back of spoon to mash/grind the ingredients together.)
    2. Transfer to a small, clean jar.
    3. This seasoning mix is not only a great accent for meats, poultry and seafood, but is also delicious on grilled or roasted veggies!

     8) Italian Dressing Mix

    1 1/2 teaspoon garlic powder
    1 Tablespoon onion powder
    2 teaspoon oregano
    1 Tablespoon dried parsley
    2 teaspoons sea salt
    1 teaspoon pepper
    1/4 teaspoon thyme
    1/2 teaspoon dried celery flakes

    Shake ingredients together and store in a jar. 


    To make Italian salad dressing: Mix 2 Tablespoons dry mix with 1/4 cup vinegar (I prefer red wine vinegar), 2 teaspoons water and 1/2 cup olive oil.

    Thousand Island Dressing

    1 cup mayonnaise ( I use Hain Safflower)
    1/3 cup ketchup
    1/4 cup pickle relish
    1 Tablespoon minced onion
    1 hard boiled egg, chopped (optional)

    Mix ingredients, cover and chill.





    9) Homemade Poultry Seasoning


    Ingredients

    2 3/4 tsp. rosemary

    1 1/2 tsp. ground thyme
    1 tsp. basil
    1/2 tsp. nutmeg
    1/2 tsp. black pepper

    Mix everything together and store in a glass jar.
     


    10) Homemade Taco Seasoning

    2 tsp. chili powder
    1 1/2 tsp. paprika
    1 1/2 tsp. cumin
    1 tsp. onion powder
    3/4 tsp. garlic powder
    1/2 tsp. sea salt
    dash cayenne

    Combine all ingredients. Use instead of 1 package of taco seasoning mix. Makes 3 tablespoons.
